Restore Balance With Kitchri

Kick off your 5-day brain boost with a 1-day Kitchri "fast". Kitchri is an Indian comfort food that Ayurvedic physicians have been prescribing for centuries. Eat enough Kitchri to feel satisfied as many times as you like throughout the day. Kitchri is packed with nutrients, eliminates toxins from the body, restores balance and promotes strength and vitality. Eat only Kitchri on first day of your brain boost, accompanied by tea or water. If you're a coffee drinker, limit yourself to one cup.

Ingredients (the items below can be found at most health food stores):
- 1 cup basmati rice
- 1 cup dried green mung beans (green gram)
- 5 cups water
- 4 tablespoons ghee (clarified butter)
- 2 teaspoon black mustard seeds
- 2 pinches asafetida
- 1 teaspoon fresh grated ginger
- 1 stick kombu (seaweed)
- 1/2 teaspoon salt
- 1 teaspoon turmeric
- 1 cup chopped kale
- 1/2 cup chopped fresh cilantro
Preparation:
- Soak beans for 3 hours or overnight.
- Drain water from beans.
- Wash the rice.
- In a saucepan warm the ghee.
- Add the mustard and cumin seeds and sauté for 2 minutes (or until they become fragrant).
- Stir in the turmeric, mung beans and rice.
- Add the water, ginger and kombu.
- Simmer for 40-60 minutes.
- Add the kale and cilantro.
- Add more water if necessary. The Kitchri should be the consistency of a hearty soup.
