Summer Mix Salad

This tangy salad combines organic fruits, vegetables, herbs and spices to create a tart and tasty meal that has provides the additional benefit of hydration. Serve this salad for lunch or dinner and enjoy all the health benefits nature has to offer.

Ingredients:

  • 2 large, unripe, firm, green-skinned mangoes
  • 4 medium tomatoes
  • 1 medium onion
  • 1/2 cup fresh chopped cilantro
  • 1/2 cup fresh chopped mint
  • 3 teaspoons sugar
  • 1 tablespoon lime juice
  • 1 tablespoon fresh chopped basil
  • 1/2 teaspoon rock salt
  • dash of cayenne pepper
Directions:
Chop and place all the ingredients in a large salad bowl. Mix thoroughly and chill for at least one hour. Before serving, season to taste with rock salt.

Note: Papayas, peaches or pineapples may be substituted for mangoes.
